Creative and scientifically sound: Videos as final projects in food, nutrition and health

A short video interview with Judy Chan, a sessional lecturer for FNH200: Exploring Our Foods and an educational developer at the Centre for Teaching, Learning and Technology, which explores how Dr. Chan integrated a video assignment into her class and what she learned during the experience. Dr. Chan has been embracing the “student as producer” module by asking learners to form groups and explore the science behind any food product they want. Originally, the students made poster presentations.  The following year students were asked to create articles on the UBC Wiki with the intent of having openly available informational pages for the food products. She then decided to add a five minute video component instead of the presentation. The videos needed to be educational and their intended audience was people who had not taken the class.
